Jalapeno Lime Salad Dressing (or marinade)

Tired of Italian or Ranch?  Try this!  I love the combination of jalapeno, lime and cilantro -especially in a salad dressing.  You can also use this as a marinade for chicken or fish.  Do not be afraid of the name of the dressing, just because it has jalapeno, doesn't mean it's spicy (well...make sure you remove the seeds and membrane).  This is great on a Tex-mex style salad to serve with fajitas or as an alternate dressing for our corn avocado tomato salad.




Jalapeno Lime Salad Dressing 
(or marinade)


1 Jalapeno (remove seeds and membrane)
1 clove garlic
2 tbsp red wine vinegar
1 tsp salt
1 tsp fresh grated ginger
1/4 C packed cilantro leaves (no stems)
2 tbsp honey (adjust to your taste)
1/4 C lime (equiv to 3 limes)
1/4 C (or so) olive oil

Remove seeds from jalapeno and cut into about thirds. If you want extra heat, leave seeds in.

Put all ingredients, except olive oil, and puree in blender.  After thoroughly blended and incorporated, turn blender on again and stream in olive oil. You will see some cilantro pieces that are stubborn and don't break down, no worries. If you find this a little too tart or if you like dressings on the sweeter side, feel to add more honey.
