Ricotta and Spinach Parcel




I love making these parcels of joy because they're easy to put together and freeze well. It's perfect for lunch or dinner. Freeze them and pop them in the oven for a quick and simple meal. 

I've made these into a triangular shape however, you can shape them into anything you wish. Make them into small crescent shapes or into rounds big or small... It doesn't really matter it will taste good either way.

All ingredients in the bowl ricotta, spinach, egg, cheese, nutmeg and pepper.

Mix to combine all ingredients

Cut pastry sheets in fours 

That's about 2 heaped tbls of the mixture

     Bake until puffed and golden brown 


So lets begin! 


1 cup ricotta
1 cup spinach frozen or the equivalent fresh chopped 
1 egg slightly beaten
1/2 cup mozzarella 
1/2 cup pecorino Romano
1/4 tsp nutmeg
Pepper to taste
2-3 sheets of frozen puff pastry, cut into fourths 
Butter to cost each parcel

I was able to get 10 triangles out of 2 1/2 pastry sheets. If you want to freeze them just make sure you wrap each one in baking paper, this way they don't stick to each other. 

In a bowl mix all ingredients and season with pepper. You may not need salt as the pecorino is slightly salty. 

Cut pastry sheet into fours and in the middle of each place about 2-3 tbls of the ricotta mixture in the center of the pastry sheet. Seal and crimp edges. Depending on the size of your sheet and how you cut it, adjust the amount of ricotta mixture. Once each parcel is sealed, place on baking pan lined with baking paper and coat each one with some butter that has been softened. You could also use an egg wash! That's one egg beaten with a little water or milk. 

Place in a 325 preheated oven for 15 mins... All ovens are different so please adjust your oven accordingly.
