Corn, Avocado and Tomato Salad


Another delicious Pinterest find!!  This has got to be one of my favourite salad recipes of all time. Why you ask? Well, it has my three favourite ingredients, corn, avocado and fresh coriander (cilantro)! My mouth waters just thinking of this combo :)

What makes this salad just fabulous is that the leftovers taste even better the following day!!!! It's the perfect salad to serve as a side dish next to our kofta recipe. Simple, tasty and easy to put together.  

The dressing a honey-lemon vinaigrette gives this salad such an amazing flavour!! There's something about honey and lemon that I love. The sweetness of the honey along with the tangy lemon is always a winning combo in my book.


I've removed the corn kernels off the ears... I actually removed corn from 4 ears I had smaller sized corn
    
Always try and use tomatoes off the vine, they taste so much better

Cut the cherry tomatoes in fours

A handful of coriander (cilantro)

Combine corn, tomato, red onion, coriander and half the dressing

Now chop up your avocado

Add your avocado to the rest of the salad and slowly fold in the avocado, this will ensure that the avocado doesn't turn into mush... Finally add the remaining dressing. 


Ingredients

10 cherry tomatoes, cut into fours
1 ripe avocado, medium sized, use 2 if they are smaller
2 fresh ears of corn
2-3 tbls fresh coriander (cilantro), finely chopped
1/2 medium red onion

For the Dressing

Juice of half lemon
3-4 tbls oil
1 tbsp honey
1 clove of garlic, crushed
Salt and Pepper to taste

Mix dressing in a jar and shake to combine... Set aside until needed.

Remove the husks from the corn and boil or grill your corn until cooked through, cut the corn off the ears and place in a bowl. Chop red onion, coriander (cilantro) and tomatoes and add to the corn. At this point add half your dressing and toss to combine. Finally, chop your avocado into small chunks and add to the salad. Finish off with the remaining dressing, toss carefully to combine all the ingredients.
