How To Roast a Red Bell Pepper

One pepper yielded approximately 6.0 oz in weight.

How to roast red bell peppers:
Preheat oven to 500. Wash bell peppers well but do not cut them.  Place them on a cookie sheet and place in oven. I usually line the cookie sheet with foil to make the clean up easy because I'm lazy.  The high heat of the oven will char the outside and it will turn black.  As it is "cooking" in the oven, check on them and turn peppers if you need to.  It's nice to get an even char on most sides if possible.  This whole process will take about 20-30 min or so.  When you remove them from oven place them in a zip-type sealable bag and seal it or place in an airtight container for about 20 minutes.  It will deflate and look funny.  By doing this process the skin can be removed very easily.  Peel peppers and remove stem, core and seeds.  Slice and put in your sandwiches or salads or puree into sauces or spreads.
