Chocolate Chip Banana Bread

This recipe was given to me by a very dear friend over 10 years ago.  I changed the recipe just a little but I still maintained the integrity of the original recipe (I hope).  Banana and chocolate were made for each other and this moist muffin is the perfect culmination of these two.  Enjoy with a warm cup of coffee in the morning or anytime!





First puree the cottage cheese and set aside

Since I had the food processor out, I went ahead and put the 2 bananas a gave them a few quick pulses

Until you get some smooth chunky texture like this

2 medium sized bananas will give you approximately 1 cup

Get your third banana (which will probably give you about 1/2 cup) and give a rough chop so you still see chunks and set this aside apart from the 1 cup that you mashed.

Beat your eggs first (forgot to show this step), then add the oil and sugar and cream (beat) until it is a smooth mixture.

Add the pureed cottage cheese and 1 cup of the mashed/pureed banana

Add the dry ingredients

Once combined, add the 1/2 cup of chopped banana and mix until combined

Add the chocolate chips

This recipe makes:
Two 12-cup muffin tins (actually you will have extra and end up making about 28-30 cupcakes)
or
Two 9x5 inch loaves

For muffins, bake at 350 for 14-16 minutes. 
For loaves, bake at 350 for 40-50 minutes

Enjoy with a warm cup of coffee


Chocolate Chip Banana Bread
3 Cup flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
1 Cup sugar
1 Cup oil (canola, corn or vegetable NOT olive oil)
3 eggs
1 Cup mashed banana (approx 2 med bananas)
1/2 Cup chopped banana (approx 1 med banana)
1 Cup cottage cheese, pureed
1 Cup chocolate chips (about 1/2 bag -but you can decide how much you want)

Preheat oven to 350.
Combine baking powder, baking soda, salt, cinnamon and flour and set aside.
Puree the bananas and divide them.

Beat (with electric mixer) the eggs until fluffy, about 4 minutes. Then add the sugar and oil till well mixed. Stir with a spoon, or using the paddle attachment in your stand mixer, 1 cup mashed banana and cottage cheese. Once thoroughly stirred, add the flour mixture and stir with a spoon (or using the paddle attachment) till evenly mixed. Add 1/2 cup of the chopped banana and stir in chocolate chips.

Makes 2 9x5 loaf pans (sprayed with floured nonstick cooking spray). Cook time is about 40-50 min depending on what baking vessel you use.  Glass tends to cook faster than nonstick. Once 40 min passed do the toothpick test.

Or...
Two 12 Cup muffin tins (sprayed with nonstick flour cooking spray). Bake for 14-16 minutes

Note:
You could always add walnuts or blueberries instead of chocolate chips if you (sigh) do not like chocolate.  Since chocolate has a sweetness to it, I altered the original recipe to one cup of sugar.  If you add a blueberries or walnuts you can increase the sugar to 1 1/2 cups if you like.  I've even done this recipe with 3/4 cup of sugar and it still tasted yummy.
