Zucchini and Haloumi Fritters


Another family favourite in my household is the delicious fritter. A simple meal that's easy to put together and full of flavour. I love this particular fritter because I can get creative with the dish, by adding corn or shredded carrot. 

This is one dish I turn to when I'm completely out of ideas for dinner. Also, it helps that my kids love this fritter, especially when I add corn. Why not try this delicious meal and serve it next to a beautiful green salad. 


Place a cup of flour and 1/2 tsp baking powder into a sifter and sift to combine

Make a well in the flour and add whisked egg and 1/2 cup water... Using a balloon whisk incorporate egg, water and flour to form a smooth batter. 

To the batter add shredded zucchini, haloumi cheese and fresh dill 

Mix to fully combine batter with zucchini and cheese. Season with pepper to taste... Remembering the cheese is a little salty so no need to add more salt. 

Fry until golden brown

1 cup flour
1/2 tsp baking powder
1 egg, lightly whisked
1/2 cup water
250g of haloumi cheese, grated
2 zucchini, grated
1 1/2 tbls chopped fresh dill
Pepper to taste
Oil to shallow fry


In a large bowl sift flour and baking powder.  Make a well in the middle of the flour and add the egg and 1/2 cup of water. With a balloon whisk combine until a smooth batter is formed. 

To the batter add the shredded zucchini, haloumi cheese and dill. Season with pepper. 

In a frying pan add enough oil to shallow fry. Add 1/3 cup of the mixture at a time and fry until golden brown, about 3-4 minutes on each side.
