Creamy Mashed Potatoes with Sour Cream



This is a simple side dish but yummy with your favorite protein. I love a creamy mash and adding a bit of sour cream makes this just a little bit better. My girls happen to love mashed potatoes, then again who doesn't right? Who am I kidding its one of my favorites as well :)
This recipe I make often when I'm in need of quick side dish. 

A few ingredients that creates a terrific complement to any dish. Now this particular recipe will make enough for 3 people, however double or tripling the recipe would be just fine...Well let's get started. 

A few simple ingredients potatoes, butter and sour cream and salt (not pictured). 


Since I was only wanting a small amount I only used a 1lb and 1/2 of potatoes. Peel and chop the potatoes place in water and boil with salt until fork tender. 

While potatoes are cooking in a separate saucepan warm the milk and butter. 

Once potatoes are cooked I placed them into a ricer to create a smooth mash.  Once all mashed add the milk mixture and stir to combine along with the sour cream. Season with salt if needed, being aware you have already salted the water when boiling potatoes. 

Ingredients

1.5lbs potatoes, peeled and chopped
3/4 cup milk 
2-3 tbls butter
2 tbls sour cream
Salt 

Peel and chop potatoes place in salted water and bring to a boil. Boil until potatoes are fork tender, about 20 mins. 

In a separate saucepan add milk and butter bring to a gentle simmer. You want to just heat the milk and melt butter. 

Once potatoes are cooked drain and allow all the potatoes to dry out a bit. Smash potatoes using a ricer or a masher. 

Stir in heated milk and mix to combine, add a little milk at a time and stir after each time. You may not use all milk so be careful as to not water down the potatoes, also remember you still have the sour cream to add which can make it more watery. Once you are happy with the consistency add the sour cream. Salt to taste if need be.
