Mediterranean Salad Dressing

Salad dressing should enhance a salad and not kill it. Most bottled dressings on the market mask fresh salad with preservatives which can leave it tasting a little odd, at least in my opinion. This vinaigrette has a nice tang from the Dijon mustard and red wine vinegar but is balanced by the sugar and olive oil so that it isn't overpowering. If you like vinaigrette dressings with a Mediterranean flair, you'll love this one.  With ingredients that you probably already have on-hand, why not just make your own?  You'll really think twice about purchasing bottled dressing again!






Mediterranean Salad Dressing
1/2 C red wine vinegar
1 tsp sugar
1 tbsp oregano
1 tbsp basil
1 tsp salt
1 tbsp onion powder
1 garlic clove, minced
1 1/2 tbsp Dijon mustard
1/2 tsp pepper
1 C olive oil

Put all in a blender and blend til incorporated.  If you like Parmesan cheese, try adding 2-4 tbsp and omitting the salt.
