Greek Yogurt Pancakes





Pancakes. The perfect Saturday morning breakfast treat.  The breakfast treat that most wait all week to eat or make.  The first thing my husband asks me today, and on most Saturday mornings is, "How about pancakes today? And how about putting blueberries in them?".  Using Greek yogurt, and a lot of baking powder, yield a light fluffy pancake that will cherish you and your loved ones on those gotta-have-pancakes Saturday mornings.  So if you are reading this post, particularly on a Saturday morning, I'll stop rambling and lead you on to the recipe so that those in your house can start eating already...

Try putting a piece of bacon in your pancake! Cook your bacon and place it on top as it is cooking on the griddle. Lay the batter in an oval shape on your griddle so as to accommodate shape of the bacon.






Greek Yogurt Pancakes

Makes approximately 22-24 4" diameter pancakes
2 1/2 C flour
1/4 C + 2 tbsp sugar
1 tbsp baking powder
1 tsp baking soda
1/2 tsp salt
4 tbsp melted butter (1/2 stick)
2 eggs
2 tsp vanilla
1 C milk
2 C plain Greek yogurt
blueberries (if desired)
Butter for griddle

In one bowl, combine the dry ingredients:
flour
sugar
baking powder
baking soda
salt
...and using a wire whisk, whisk until combined

In another bowl combine:
milk
yogurt
vanilla
eggs
...Beat with a whisk until all incorporated. Add this mixture into the bowl that has the dry ingredients. Add the melted butter also.  Using a wire whisk, whisk until all combined.  There may be some small lumps but that's okay.  Heat your griddle at 275. Let your pancake mixture sit while the griddle heats up. Let it sit for about 15 minutes.  The lumps will somewhat disappear.

Once the griddle is heated, you can add a 1 tbsp of butter or so (let it melt and bubble a little) and scoop some batter onto your griddle.   If you are using blueberries, sprinkle them on now.  Let the pancakes cook for about 5-6 minutes on each side.  With the abundance of baking powder and the low and slow cooking method, this will result in a fluffy pancake.  The butter on the griddle also gives these pancakes a nice flavor and a crispy edge.  If your griddle is nonstick and if you want to spare yourself the calories, you can skip the butter during the cooking process.  It will taste a little different but I at least had to appease my conscience to tell you.  I usually skip the butter-on-the-griddle step but decided to live on the edge today and do it.  I am ruined. I will always do it from now on and tell myself over and over, "But the extra walk around the block IS worth the butter-on-the-griddle step!"
